Cut Da Carb is a high fiber product that you can buy from Netrition or Amazon. It's a blend of wheat gluten and soy protein with a lot of fiber added in. It's got a pretty neutral flavor, and it's extremely easy to work with — as long as you don't mind having a dough that isn't stretchy, since it doesn't contain starch or yeast and has very little fat. (Note: If you have celiac disease or are sensitive to gluten, this product likely isn't for you.)

I love the idea of flatbread, but I hate the carbs! So, I set out to make a low carb version of my own. I think this turned out great and will definitely be making it again. It's super easy, and you don't need any fancy ingredients or gadgets (just a microwave). I love to eat it with hummus, or in place of tortillas for taco night. The possibilities are endless.

This recipe was inspired by one I found on Pinterest. However, I made some adjustments so that it would be more closely resemble real flatbread, and less like an egg pancake.

It's super important that you use parchment paper to cover your dish when cooking in the microwave. The first time around, I used a piece of wax paper instead that I had in my fridge drawer and it melted onto my bread (it also started smoking).

I'm not sure if this is a problem with all microwaves, or just mine. However, if you're scared to use parchment paper and want to risk trying wax paper, I highly recommend playing it safe and testing it first on a plate by itself.

Cut da Carb Flatbread is a vegetable wrap designed to resemble sliced bread.

If you can't find it, use another brand of superfine almond flour or simply process regular almond flour in your food processor for a minute or two to break down the bigger granules.

Like most nut flours, almond flour is high in protein and fiber and low in carbs. In fact, about a quarter of its calories are from protein — not bad for something that tastes as delicious as these flatbreads!

The Flaxseed Meal

Flaxseed meal is a great addition to gluten-free baked goods because it works as both an egg replacer and binder. When mixed with water, it becomes gelatinous and thickens up nicely, producing a dough that holds together better than many gluten-free alternatives.
